Dr. Klaus Tenbergen, an assistant professor of Culinology® at California State University, Fresno, has in the spring 2011 edition of Sizzle magazine, the quarterly of the American Culinary Federation written about his recent trip to Chile won in a recipe competition.

Tenbergen’s trip was part of the grand prize in the Chilean Fresh Fruit Association’s 2009-10 Fresh ’n’ Fit Recipe Contest.

His award-winning recipe was “Pollo ajonjoli with Chilean Asian Pear Chutney and Blueberry Balsamic Reduction.” It placed first in two categories (Best Fruit Dinner and Best of Blues Dinner). Tenbergen’s “Chilled Blueberry and Peach Soup” won Best of Blues Lunch.

His trip in January gave Tenbergen an opportunity to sample freshly harvested produce of the Chilean summer and also to visit places from which come some of the ingredients in his winning recipes.

Tenbergen joined the Jordan College of Agriculture’s Department of Food Science and Nutrition in 2006, following a professional culinary career that began as an apprentice baker in Germany and took him to cooking in Namibia, Bophuthatswana, South Africa and the United States. He holds certifications as a master baker, executive pastry chef and food executive.

In 2010, Tenbergen was in the first cohort of graduates of Fresno State’s independent Doctoral Program in Educational Leadership. He also hosts “The Flavors of the Valley,” a radio show with guests from a broad range of food experiences, at 11 a.m. Sundays on KFSR, FM 90.7.
